Hmmm Profiteroles

With the school half term upon us it is time to entertain the kids. On Tuesday we (Greg and I) made these profiteroles. They are really simple to make but probably not the most healthy thing to eat. Anyway we really enjoyed making them and had a great laugh in the process.
The recipe came from a book "Complete Book of Deserts - Good Housekeeping" sponsored by Tate and Lyle so it is not surprising that the recipe contains a fair amount of golden syrup. Though the pastry recipe warns that the instructions should be strictly adhered to the Choux pastry turned out to be fairly easy to make (plain flour, butter and eggs). If I am honest this was at the second attempt. Our first attempt ended with the eggs and water mixed together rather than the butter and water.
When cooked the Choux pastry grew spectacularly.
If doing this recipe again I would leave putting the chocolate mix (chocolate, golden syrup, butter and vanilla essence) on the profiteroles until you serve them as this stops the chocolate soaking into them.
You really need a piping bag to fill the profiteroles with cream. We used some greasproof paper and sticky tape. This worked for a while but eventually burst which was very amusing.
All the profiteroles were eaten.
